Cherries – Fresh sweet cherries are my top choice for this recipe, but frozen pitted cherries work just as well when fresh cherries aren’t in season. Both fresh and frozen cherries create a delicious compote with plenty of flavor. You can also experiment with other varieties, such as sour cherries, black cherries, or wild cherries.

750g (5 cups) halved pitted sweet cherries
60g (1/4 cup) fresh lemon juice
100g (1/2 cup) granulated sugar
1 teaspoon cornstarch
1/4 teaspoon cinnamon, optional

Wash the cherries thoroughly by placing them in a large bowl of cold water and gently rubbing the skins with your fingers. Drain and rinse them in a colander under running water. Pat dry if needed, then remove the pits using a cherry pitter and slice the cherries in half or quarters.
STEP 2 – Cook the Cherry Compote
Add the cherries, fresh lemon juice, granulated sugar, cornstarch, and cinnamon to a large saucepan. Stir everything together until well combined. Place the saucepan over medium-high heat and bring the mixture to a gentle boil, stirring occasionally.
